Big Strong U Red Beans & Rice

INGREDIENTS:

  • Red kidney beans
  • Yellow split peas
  • Baby Roma tomatoes
  • Cucumber
  • Mushrooms
  • Red bell pepper
  • Red onion
  • Black Pepper
  • Onion powder
  • Garlic powder
  • Olive oil


Here is how I did it:

First I boiled/steamed the red beans and lentils in a pot for 2 hours, while also steaming the brown rice in a separate pot for the same time. Following that, closer to the time for the rice and beans to be ready, I sliced and chopped the veggies and sauteed them over a little olive oil in a small saucepan for 3 minutes. While sauteing them, I seasoned them with black pepper, onion powder and garlic powder.

Then, to serve this I placed the brown rice on the plate first, covered them with the mixed beans, and then topped it off with the sauteed veggies. That's it! If you give this a try, let me know how you like it.
