I'm winding down my second full week of intermittent fasting, and I'm ending today's fast with some vegetable fried rice that I made using Cahokia Brown rice. I've lost 12 ponds in 12 days and I'm going to keep going with intermittent fasting until I stop seeing results. This vegetable fried rice made with Cahokia brown rice was the perfect way to end today's fasting period. Here is what I put in it:
- Cahokia Brown Rice
- Chopped red bell pepper
- Chopped carrots
- Sliced mushrooms
- Chopped yellow bell pepper
- Fresh spinach leaves
I steamed the rice first, then I fried the vegetables in olive oil for a few minutes before I added the cooked rice into the saucepan with the veggies and stir-fried it all together for a few minutes. I seasoned the rice and veggies in the pan with onion powder, black pepper, and lemon pepper. Once the rice and veggies were ready, I completed my plate with a salad and some mixed, fresh fruit.
