Red Beans & Rice: Big Strong U StyleEAT MORE PLANTS!
I was going to do something else for dinner tonight, but when I opened the cabinet and saw a bag of red kidney beans & a bag of split peas, I KNEW what was about to go down. I had to make red beans & rice, Big Strong U style! To answer the question some of you are asking, yes... that is Cahokia Brown Rice that I used... you know how I get down.
INGREDIENTS:
- Red kidney beans
- Yellow split peas
- Baby Roma tomatoes
- Cucumber
- Mushrooms
- Red bell pepper
- Red onion
- Black Pepper
- Onion powder
- Garlic powder
- Olive oil
Here is how I did it:
First I boiled/steamed the red beans and lentils in a pot for 2 hours, while also steaming the brown rice in a separate pot for the same time.
Following that, closer to the time for the rice and beans to be ready, I sliced and chopped the veggies and sauteed them over a little olive oil in a small saucepan for 3 minutes. While sauteing them, I seasoned them with black pepper, onion powder and garlic powder.
Then, to serve this I placed the brown rice on the plate first, covered them with the mixed beans, and then topped it off with the sauteed veggies. That's it! If you give this a try, let me know how you like it.
